Guilt Free Chocolate Fudge Cups

Looking for an EASY, fuss free chocolate snack recipe to indulge in, yet stay totally on track with your weight loss goals?

This is it!

You CAN have your cake and eat it too! All of the recipes on my website and eBooks are like this – they look unhealthy, but they’re not. Win win. 

The kids love them too (as always).

Guilt Free Chocolate Fudge Cups

Serves: 2

Prep time: 5 mins

Cooking time: Setting time: 30 minutes

Ingredients:

  • 20 g chocolate protein powder (see here for best suggestions. My go-to is the chocolate protein by Morlife - enter code healthwithbec for 15% off).

  • 2 tsp coconut oil

  • 1 tbsp peanut or almond butter

  • 3 tbsp unsweetened almond milk

  • 2 tsp stevia

  • 2 tbsp cacao powder

Method:

  1. In a small microwave safe bowl, add almond butter, coconut oil, almond milk and stevia (optional but highly recommended if your protein powder is not sweet).

  2. Heat in the microwave for 10 seconds and stir to combine.

  3. Mix in protein powder and cacao until a smooth, thick texture forms.

  4. Divide mixture evenly into two muffin cases.

  5. Place in the freezer for 30 minutes to set.

Notes:

  • Option to double the recipe and make 4 fudge cups

  • I used silicone muffin cases from Kmart but paper ones should work fine

  • Store in the fridge for up to one week!
