Guilt Free Chocolate Fudge Cups

Serves: 2

Prep time: 5 min

Chill time: 30 min

Ingredients:

  • 2 tsp coconut oil

  • 1 tbsp peanut or almond butter

  • 3 tbsp unsweetened almond milk

  • 2 tsp granulated monk fruit blend

  • 20 g chocolate protein powder (My go-to is the Plantiful Chocolate Protein by Morlife - enter code healthwithbec for 15% off).

  • 2 tbsp cacao powder

Method:

  1. In a small microwave-safe bowl, add coconut oil, almond butter, almond milk, and monk fruit (optional but highly recommended if your protein powder is not sweet).

  2. Heat in the microwave for 10 seconds and stir to combine.

  3. Mix in protein powder and cacao until a smooth, thick texture forms.

  4. Divide mixture evenly into two muffin cases.

  5. Place in the freezer for 30 minutes to set.

Notes:

  • Double or triple the recipe ingredients and make 4–6 fudge cups

  • I used silicone muffin cases from Kmart but paper ones should work fine

  • Store in the fridge for up to one week or in the freezer for up to 3 months
