Crispy, golden fritters loaded with squeaky haloumi and fresh zucchini, and they’re baked instead of fried! That means no standing over a hot pan. Just pop them in the oven, flip once, and you’re done.
These Baked Haloumi & Zucchini Fritters taste so indulgent but, like all my recipes, they’re built to keep you full and support your weight loss and gut health goals. They’re high in protein and fibre, low in carbs, gluten free, sugar free, egg free and made with simple whole food ingredients that are easy to find.
The secret here is the haloumi and almond meal…
Most fritters rely on eggs and plain flour to hold them together, but in this recipe the haloumi melts in the oven and binds everything for you. That makes these fritters egg free (which is so great because I know it can be hard to think of high protein ideas for breakfast that don’t use eggs if you have an egg intolerance!)
Haloumi gives them a big protein boost too, since haloumi has almost double the protein of eggs, gram for gram!
And swapping the flour for almond meal keeps them gluten free and low carb, so they won’t spike your blood sugar and leave you crashing or starving an hour later. It also boosts the fibre content, which feeds the good bacteria in your gut.

Ingredients:
For the Fritters:
Olive oil spray
300 g zucchini, grated (about 1½ zucchini)
150 g haloumi, grated
50 g almond meal
2 tbsp Parmesan cheese, finely grated
¼ cup fresh coriander, finely chopped
1 spring onion, finely sliced
1 tsp ground coriander
½ tsp garlic powder
Pinch salt
To Serve:
¼ cup sugar-free sweet chilli sauce*
1 tbsp fresh coriander, finely chopped (optional)
Method:
Preheat the oven to 180°C fan-forced / 360°F. Line a baking tray with baking paper and lightly coat with olive oil spray.
Wrap the zucchini in a clean tea towel and twist to squeeze out as much moisture as possible, discarding the liquid.
Add the zucchini to a large bowl with the haloumi, almond meal, Parmesan, fresh coriander, spring onion, ground coriander, garlic powder, and salt, and mix well to combine.
Place an egg ring on the prepared tray and spoon the mixture into the middle. Press the mixture down with the back of a spoon so it fills the ring evenly, then lift off the ring. Repeat with the remaining mixture to make 6 fritters. Lightly spray the tops with olive oil spray.
Bake for 15 minutes, then gently flip and bake for another 10 minutes, until golden and crisp.
Divide the fritters between plates, scatter with the extra fresh coriander (if using), and serve with the sweet chilli sauce on the side.
Enjoy 3 fritters per serve.
Bec’s Tips:
These fritters are so versatile! Enjoy 3 fritters on their own for breakfast as shown in the recipe above. Alternately, add a big green salad for an easy lunch, or enjoy 1 fritter as a quick high-protein snack!
Squeezing the moisture out of the zucchini is the secret to crispy fritters, so don’t skip this step! The drier the mixture, the better they hold together.

You can also easily make your own sweet chilli sauce! Just mix together 2 tbsp sugar-free maple syrup, 2 tsp lime juice, 1 tsp rice wine vinegar, ½ tsp sriracha, ½ tsp chilli flakes, and a pinch of salt.
Don’t have an egg ring? A cookie cutter will work just fine! Your fritters will be slightly smaller, but you’ll be able to make 4 fritters per serve, rather than 3.
This is a great recipe for the whole family to enjoy. Serve theirs in a wrap or with a slice of toast on the side.
Spraying oil over your fritters helps distribute a small amount of oil evenly. I recommend a refillable oil sprayer bottle rather than an aerosol cooking oil.
Most of my program recipes are dairy free or suggest dairy-free alternatives, however dairy-free alternatives unfortunately won’t work in this recipe, as the haloumi is what holds the fritters together.
Trust me, the whole family will be fighting over the last one!
