Slow Cooked Marry Me Chicken

Ingredients:

  • 600 g chicken breast, skinless

  • 1 tsp chicken bone broth concentrate*

  • 125 ml boiling water

  • 150 ml canned coconut cream, light

  • 3 cloves garlic, minced

  • 1 tsp Italian herbs

  • 1 tsp onion powder

  • 1 tsp paprika

  • Pinch salt

  • Pinch pepper

  • 50 g Parmesan cheese, finely grated*

  • 75 g sun-dried tomato strips, well drained

  • 120 g baby spinach

  • 1 tsp arrowroot flour

  • 1 tsp water

  • 200 g Slendier Edamame Fettuccine* (uncooked)

  • 10 g fresh basil, shredded

 

Method:

  1. Place the chicken breasts in the slow cooker.

  2. Dissolve the bone broth concentrate in the warm water, then whisk together with the coconut cream, garlic, Italian herbs, onion powder, paprika, salt, and pepper. Stir through most of the Parmesan cheese, reserving a little to serve.

  3. Pour liquid over the chicken and scatter over the sundried tomatoes.

  4. Cook on low for 4–5 hours, or high for 2–3 hours, until the chicken is cooked through and tender.

  5. Dissolve the arrowroot flour in the water. Add to the slow cooker along with the baby spinach and stir well to combine. Cook on high for another 10–15 minutes uncovered, until the sauce thickens and the spinach has wilted.

  6. Meanwhile, cook the Slendier Edamame Fettuccine according to the packet directions, then drain.

  7. Serve the chicken over the pasta, topped with fresh basil and reserved Parmesan cheese.

  • This is a great recipe for the whole family to enjoy. Serve theirs over regular pasta or with crusty bread on the side.

  • I personally always have a jar of concentrated bone broth in the fridge.
