Ingredients:

For the Dumplings:

  • ½ tbsp sesame oil

  • 2 spring onions, finely sliced

  • 2 cloves garlic, minced

  • ½ tbsp fresh ginger, minced

  • 200 g prawns, raw and peeled, tails removed, finely chopped

  • 1 cup (70 g) green cabbage, shredded

  • 1 small carrot, grated

  • ½ tbsp sriracha*

  • 1 tsp lime juice

  • Pinch salt

  • Pinch pepper

  • 6 rice paper sheets

  • 1 tsp extra virgin olive oil

For the Dipping Sauce:

  • 1 tbsp sriracha*

  • ½ tbsp sesame oil

  • 1 tbsp lime juice

  • ½ tsp monk fruit blend*

 

Method:

  1. Make the dumplings: heat the sesame oil in a pan over medium-high heat. Add the spring onions, garlic, and ginger, and sauté for 1 minute until fragrant. Add the chopped prawns and cook for 2–3 minutes, until the prawns are just pink.

  2. Add the cabbage and carrot, and cook until the vegetables are tender and excess liquid has cooked off (5–7 minutes). 

  3. Add the sriracha, lime juice, salt, and pepper and stir to combine. Remove from the heat and allow to cool.

  4. Pour cool water into a large shallow dish or rimmed plate large enough to fit a sheet of rice paper. Dip one rice paper wrapper into the water for about 5–10 seconds (don’t over-soak) until it becomes soft and pliable.

  5. Carefully lay the softened wrapper on a clean damp cutting board.

  6. Place about 2 tablespoons of filling in the centre of the softened rice paper sheet. Fold in half, completely covering the filling. Fold the sides into the centre (it’s OK if they overlap). Carefully flip the wrapper over and fold the final piece over the filling once more (you are creating a neat little present).

  7. Heat a non-stick frying pan over medium heat and add the olive oil. Place the dumplings in the pan. Cook for about 2–3 minutes on each side until the wrappers are golden and crispy.

  8. Make the dipping sauce by combining all the ingredients in a small bowl. Taste and adjust seasoning if needed. 

  9. Serve the dumpling alongside the dipping sauce and eat straight away whilst they are hot and crispy!
