Cinnamon Scroll Mug Cake
A warm and gooey cinnamon scroll that’s done in under 10 minutes, and it's actually good for you!
This Cinnamon Scroll Mug Cake gives you everything you love about a classic cinnamon scroll: the soft, fluffy texture, the sweet cinnamon swirl, the creamy glaze drizzled on top.
But, like all my recipes, this version is high in protein, gluten free, low in carbs, sugar free, and made with whole food ingredients that support blood sugar balance and keep your gut healthy and happy.
The secret weapon here is cottage cheese. Blended into the batter, it creates the most incredible moist texture while adding a serious protein boost, meaning this little cake keeps you full and satisfied in a way a regular scroll never could.

Ingredients:
For the Mug Cake:
¼ cup egg whites (about 2 egg whites)
85 g cottage cheese, reduced-fat
¼ cup almond meal
4 tsp vanilla protein powder*
1 tsp baking powder
2 tsp monk fruit blend* (optional)
½ tsp vanilla extract
Pinch cinnamon
Pinch salt
For the Cinnamon Swirl:
1 tsp monk fruit blend*
½ tsp cinnamon
For the Cream Cheese Glaze:
1 tbsp cream cheese, reduced-fat, softened
1 tsp powdered monk fruit blend*
1 tsp almond milk, unsweetened*
Method:
Blend or whisk together the mug cake ingredients until smooth.
Pour into a large greased mug or small bowl.
Mix the cinnamon swirl ingredients, and spoon over the batter in a rough swirl shape. Use a skewer or knife to gently swirl through the batter.
Microwave for 60–90 seconds, or until the edges are set but the centre is still slightly soft.
Let it cool for 1 minute.
Mix the glaze ingredients until smooth, and spread over the warm cake. Enjoy!
