Chocolate Hot Cross Fudge

Chocolate Hot Cross Fudge
Ready In: 35 mins
Serves: 14 (28 squares - 1 serve is 2 squares)

Ingredients:
FUDGE
1 cup almond butter
1⁄4 cup coconut oil
1⁄4 cup cacao powder
2 tsp granulated monkfruit
1/2 tsp ground cinnamon
1/4 tsp mixed spice
Pinch salt
CROSS
3 tbsp (45 g) sugar free white chocolate
1/2 tsp coconut oil
Method:
Place all ingredients except for the white chocolate and second measure of coconut oil in a small saucepan. Set over a medium heat and cook, whisking, to allow the oils to melt and the mixture to form a smooth paste.
Pour into a lined loaf tin or small slice tin and refrigerate for 4 hours or until set.
To make the crosses, melt the white chocolate and coconut oil together - you can do this by heating in the microwave in 10 second bursts, stirring between each burst until melted, or on the stovetop.
Use a small spoon or piping bag to draw columns and rows across the fudge, to create 28 pieces (I draw 4 vertical columns and 7 horizontal rows). You can gently score the fudge with a knife first, to help guide you.
Place back in the fridge for 10 minutes, before slicing and enjoying chilled. Enjoy 2 pieces per serving. Store leftovers in the fridge.
