Keto Chocolate Baskets

Looking for a guilt free chocolate dessert to indulge in, yet stay totally on track with your weight loss goals this Easter?

These baskets will satisfy your sweet tooth whilst keeping your blood sugars and insulin levels very low, both of which are important to reduce cravings and burn fat. Eat one of these and you’ll easily be able to stop at one, unlike regular, high sugar easter eggs or baked goods!

Keto Chocolate Baskets

Serves: 10

Prep time: 15 minutes

Cooking time: 1-2 hours in fridge

Ingredients:

  • 1 cup flaked almonds

  • 1/2 cup shredded coconut flakes

  • 1/2 cup peanut butter

  • 50 g unsalted butter or coconut oil

  • 1/2 tsp salt

  • 1 tsp vanilla extract

  • 1/2 cup granulated stevia (I use Natvia from Coles & Woolies)

  • 1/4 cup cacao powder

  • Macadamia nuts or Easter eggs

Method:

  1. Line a baking tray with baking paper and heat oven to 160C.

  2. Spread flaked almonds and coconut over the baking tray and bake for 5-6 minutes until lightly toasted. Set aside and allow to cool.

  3. Combine peanut butter, coconut oil or butter, cacao powder, stevia, vanilla extract and salt in a microwave safe bowl or saucepan. Microwave for 15 second increments or in a saucepan over low heat until melted, smooth and combined.

  4. Add the toasted almond and coconut pieces to the chocolate mixture and combine well, ensuring everything is coated.

  5. Divide the mixture into 10 even portions on tray. Then, press down the centre of each and add half a macadamia or an Easter egg to each, for decoration. Refrigerate for 1-2 hours until set. Keep stored in the fridge!

Notes:

  • Monkfruit powder can be used in place of stevia if preferred

  • Choose a peanut butter that’s made from only peanuts. Mayvers is a great brand!
