Christmas Rum Balls
Rum Balls!
Who doesn’t love them? They’re such an iconic Christmas treat!
And, why not bake Christmas treats that taste naughty but really aren’t?!
In other words, there really isn’t any reason to feel like you’re missing out this festive season. I’m allll about this.
In fact, this rum ball recipe is healthy enough to have as a regular snack through the week all year round. You can feel confident about consuming them on a gluten free, low carb diet - like in my meal plans.
Christmas Rum Balls
Serves: 15
Prep time: 15 minutes
Cook time: 15 mins (in the fridge)
Total time: 30 mins
Ingredients
8 x squares Lindt 85% chocolate (80g)
1/2 cup light coconut cream
1 tsp coconut oil
1/2 tsp vanilla extract
30 mls of espresso or 2 tsp coffee granules dissolved in 1 tbsp boiling water
30 mls dark rum
3/4 cup + 1 tbsp almond meal
1 serve (33 g) Morlife Plantiful Chocolate Fudge Protein powder
1/4 cup hemp seeds
3 tbsp coconut flour
1 tbsp granulated monk fruit
1/4 cup desiccated coconut
3 tbsp powdered monk fruit sweetener
2 tsp water
Method:
Melt 80g dark chocolate with 1 tsp coconut oil in a double boiler.
Add coconut cream, coffee, rum and vanilla extract. Whisk gently until smooth.
Remove from the heat and stir through 3/4 cup almond meal, protein powder, coconut flour, stevia and hemp seeds. It should feel slightly sticky but if its still too runny, add the extra tbsp almond flour and stir.
Once combined, place the mixture into the freezer for approximately 15 minutes to harden slightly.
Prepare a container lined with baking paper while you wait.
Pour desiccate coconut into a bowl, remove chocolate mixture from the fridge, and scoop into 15 even sized portions and roll into balls. Roll half of the balls through the coconut mixture.
In another small bowl. add the powdered monk fruit sweetener and the water. give it a really good mix, you want it to be thick so you can drizzle a little on top of the remaining balls to make them look like teenie Christmas puddings.
Store rum balls, covered in the fridge.
Notes:
If you would prefer to just roll your rum balls through the coconut, this is totally fine!
