Rum Balls!

Who doesn’t love them? They’re such an iconic Christmas treat!

And, why not make Christmas treats that taste naughty, but really aren’t?!

In other words, there really isn’t any reason to feel like you’re missing out this festive season. I’m allll about this.

In fact, this Rum Balls recipe is healthy enough to have as a regular snack throughout the week all year round. You can feel confident about consuming them on a gluten-free, low-carb diet – just like in my meal plans.

 

Christmas Rum Balls

Ingredients

  • ​​8 x squares 85% Lindt dark chocolate (80 g)

  • 1 tsp coconut oil

  • ½ cup light coconut cream

  • ½ tsp vanilla extract

  • 30 ml of espresso (or 2 tsp coffee granules dissolved in 1 tbsp boiling water)

  • 30 ml dark rum

  • ¾ cup almond meal (+ 1 extra tbsp, if needed)

  • 1 serve (36 g) chocolate protein powder*

  • ¼ cup hemp seeds

  • 3 tbsp coconut flour

  • 1 tbsp granulated monk fruit (or sweetener of choice)

  • ¼ cup desiccated coconut

  • 3 tbsp powdered monk fruit (or sweetener of choice)

  • 2 tsp water

Method:

  1. Slowly melt the chocolate and the coconut oil together in a double boiler. Add the coconut cream, vanilla extract, espresso, and rum. Whisk gently until smooth.

  2. Remove from the heat and stir through the ¾ cup almond meal, protein powder, hemp seeds, coconut flour, and granulated monk fruit. It should feel slightly sticky, but if it’s still too runny, add the extra tablespoon of almond flour and stir.

  3. Once combined, place the mixture into the freezer for approximately 15 minutes to harden slightly.

  4. While you wait, line a container with a lid with baking paper.

  5. Into a bowl, add the desiccated coconut. Into another bowl, add the powdered monk fruit and the water, and mix.

  6. Remove chocolate mixture from the fridge. Scoop out 15 even-sized portions and, using clean damp hands, roll into balls.

  7. Roll half of the balls through the coconut mixture.

  8. Take the remaining balls and drizzle with the powdered monk fruit + water mixture to make them look like teeny Christmas puddings.

  9. Store rum balls, covered in the fridge.

  • If you would prefer to just roll your rum balls through the coconut, this is totally fine!
